 At Julia's Bistro, our inspiration comes from creating an elevated neighborhood restaurant--one where classic French culinary traditions meet the flavors, culture, and hospitality of South Texas.

Our menu is rooted in the foundations of French bistro cooking: carefully crafted stocks, refined sauces, fresh seafood, seasonal ingredients, and techniques that have stood the test of time. Alongside these traditions, guests will find influences from San Antonio's vibrant culinary landscape, Gulf Coast seafood, Southern comfort, and subtle Cajun flavors that reflect the region we proudly call home.

Under the leadership of Chef Jean-François Poujol and executive Chef Gabriel Olveda, Julia's Bistro brings together generations of culinary experience and a shared passion for hospitality. Chef Gabriel has built his career in some of San Antonio's most respected kitchens, including Battalion and Zinc Wine Bar and Bistro, where he refined his craft under notable chefs such as Robbie Nowlin. His approach combines classical technique with a deep appreciation for local ingredients and the bold flavors of Texas.

Inspired in part by Julia Child, our mission is simple: to create thoughtfully prepared food that is approachable, memorable, and rooted in genuine hospitality. Every dish is designed to honor French tradition while celebrating the ingredients and flavors that make San Antonio unique.
